Carrot Cake Test #2

On Saturday my wife made Alton Brown's recipe for carrot cake. We changed the recipe by adding 1/2 cup shredded coconut and 1/4 cup walnuts. It was tasty. We can't have all this cake sitting around or we'd get huge so I brought it to the ER where I moonlight. It was promptly gobbled.
